The flavor was good, but it was doughy/undercooked - at the edges rather than in the middle. The Zogurushi is programmable, so I think I programmed it to mix for 15 minutes (it might have been 18) and then bake for 1 hour and 10 minutes. Could you tell me how long your mix cycle was when you made the bread in your respective machines? I am thinking I need to either increase the mix time or add some rise time, but I'm not sure which. If I understood your original instructions correctly, you went directly from mixing to baking with no rise time. Any suggestions would be greatly appreciated. I am trying hard to come up with a bread machine bread that doesn't come from a mix. My kids love the Dr. Schar's bread from the Mix B but it is SOOOO EXPENSIVE! Thanks! Lately, I've been removing the paddle once it's done mixing, then pushing the dough down with a spatula. Does your machine heat while it's mixing? Mine does, because it's a " rapid " cycle. So everything is nice and warm before it starts baking when I push it down. Also - try baking it at 370 for 1 hour 20 minutes instead. That works here, too. Originally, I just used the preset " grain bread " setting when I started making this loaf. But, I found that I didn't need the dough to have a " rise " (for me, it rises during the baking time) to get a good loaf. But, maybe you should try that to see if it works for you. I just played with this recipe (and actually, I still do! until I found one that worked good for me!
