It is a sugar alcohol able to with stand the heat of the chocolate process, made from corn syrup. Unless you are diabetic, it really isn't a safe thing to be consuming. My mother would not touch the stuff if it were not for the fact she is a diabetic who loves chocolate. So while it may be GF, I would not give it to my children (unless medically necessary).
