I received these recipes in a newsletter I get from

www.oldfashionedliving.com I thought I'd pass them on, they look

good! :)

Potatoes have gotten a bad rap over the last few years,

and yes, if you eat more than your share and eat them

too often they can help you put on inches. But you don't

have to eliminate potato dishes. They are favorites of

kids and adults. Serve potato dishes with a lean meat

like boneless, skinless chicken breast or fish, and a

nice salad.

Parmesan Potato Wedges

Ingredients:

Three medium potatoes, peeled

1/4 cup grated Parmesan cheese

1 red bell pepper

1 green bell pepper

Olive Oil

Cut the potatoes into 1-inch wedges; coat with olive oil. Sprinkle with

the Parmesan cheese; toss and place on a nonstick baking sheet. Roast

the potatoes for 15 minutes. Meanwhile, seed and cut one each medium

red and green bell peppers into 1-inch strips and toss in a bowl with 1

teaspoon olive oil. Add these to the partially cooked potato wedges.

Roast an additional 10 to15 minutes, or until both the potatoes and

peppers are tender.

Savory Roasted Potatoes

Ingredients:

1 tablespoon olive oil

1 tablespoon chili powder

2 teaspoons minced garlic

3/4 teaspoon salt

1/2 teaspoon ground black pepper

4 large red potatoes, scrubbed

1 medium sweet onion, cut into wedges

1 1/2 cups halved cherry tomatoes

1/3 cup coarsely chopped fresh cilantro leaves

1 tablespoon fresh lime juice

Heat

oven to 400 degrees F. Cut the potatoes lengthwise into 1/2-inch thick

wedges. Lightly oil a baking sheet. In a bowl, combine the chili

powder, garlic, salt and pepper in a bowl. Add the potatoes and

onion and toss to coat evenly. Place on the baking sheet in a single

layer. Bake 25 minutes. Add the tomatoes; bake an additional 10 minutes

or until potatoes are tender. Transfer all to a serving bowl or

platter. Add the cilantro and sprinkle with lime juice; toss lightly.

Oven French Fries

Ingredients:

4 large baking type potatoes

8 cups ice water

1 tsp. garlic powder

1 tsp. onion powder

1/4 tsp. salt

1 tsp. ground black pepper

1 tsp. pepper flakes

1 tbsp. olive oil

Scrub the potatoes and cut into 1/2-inch strips. Place the strips into

ice water, cover and chill for 1 hour. Remove potatoes and dry with

paper towels or a clean kitchen towel. Place the garlic powder, onion

powder, salt, pepper, and pepper flakes in a plastic bag. Toss the

potatoes in spice mixture. Place in shallow baking pan. Drizzle or

brush with olive oil. Cover with aluminum

foil and bake for 15 minutes. Remove foil and continue baking for an

additional 15 to 20 minutes or until golden brown. Turn the fries

occasionally during baking. Makes 5 servings

Lemon Herb Potatoes

Ingredients:

4 large baking Potatoes

1/4 cup grated Parmesan cheese

3 tablespoons minced fresh parsley

1/2 teaspoon paprika

1/4 teaspoon salt

1/4 cup margarine or butter

1 tablespoon lemon juice

Scrub the potatoes. Combine the Parmesan, parsley, paprika and salt in

a small bow; set aside. Cut potatoes crosswise into 1/4-inch thick

slices. Soak potatoes in ice water for 10 minutes. Combine the

margarine and lemon juice in a glass bowl or a measuring cup. Microwave

on high for 30 seconds or longer until the margarine is melted.

Drain the potatoes and pat dry. Arrange the potato slices,

cut side up, in a microwave-safe baking dish. Brush the potatoes with

margarine mixture. Cover and microwave on high for 12 to 14 minutes, or

until tender.

Halfway

through cooking, rotate the pan and turn the potatoes over, and brush

with the remaining margarine mixture. When tender, sprinkle potatoes

with cheese mixture. Allow to stand, covered, for 5 minutes, then

serve.

Greek Style Oven Fries

Ingredients:

2 medium baking potatoes

1 tsp. dried oregano

1/2 tsp. garlic powder or granules

1/8 tsp. salt

2 Tbsp. olive oil

freshly ground black pepper to taste

Vegetable cooking spray

Cut the potatoes lengthwise into 8 wedges. Cover with ice cold water

and soak for 30 minutes. Pat the potatoes dry. Place the potatoes

skin-side down on a baking sheet sprayed with cooking spray. Blend

together the oil, oregano, salt and pepper. Brush over the potatoes.

Bake at 400 degrees for about 50 minutes until they are tender and

browned.
