Guest guest Posted May 5, 2005 Report Share Posted May 5, 2005 Creamed spinach bake (this was an experiment that actually turned out really good!) 3/4 bar 1/3 less fat cream cheese (room temp or nuked for 30 seconds to make soft) 1/4 cup skim milk 1 bag frozen chopped spinach, thawed & drained (or two boxes) 1/2 red pepper 1 portabello mushroom, coarse chopped 1/4 of a red onion, minced 1/2 cup mozz cheese, plus more for topping Saute the pepper, mushroom & onion in garlic & 1/2 T olive oil till soft. Mix cream cheese & milk in large bowl & stir to combine. Add spinach, mushroom mixture and 1/2 cup mozz cheese to cream cheese mix and combine well Pour into small baking dish and top with sprinkle of mozz cheese. Bake at 350 for 30 minutes. Enjoy!
