Guest guest
Summer 2005 I love barbequing for taste, convenience and summer fun! The challenge is my husband and son have Celiac Disease. The majority of the seasonings, rubs, marinades and sauces available contain gluten, loads of sugar, hydrogenated oils, salt and preservatives like msg - but not Cali! What do you recommend for fast and tasty family meals on the barbeque? Thank you for making such great products. It's such a relief to know Cali Spice Mixes are manufactured in a dedicated gluten-free facility! ‘Sizzlin’ Suzy’ HERB & GARLIC BURGERS Combine: 2 lbs lean ground beef, turkey or chicken½ pkg Cali Herb Medley ½ pkg Cali Garlic GustoLet stand 10 minutes.Shape into patties.Cook on oiled racks of Barbeque.Top with Cali Fresh Salsa -- see recipe at www.califinefoods.comServe on gluten-free buns or baguettes.Yield: 8 burgers at ¼ lb each BBQ ROASTED VEGETABLES 1 lb mushrooms1 red & 1 green pepper, cut in thick strips3 stalks celery, cut in sticks1 lb baby carrotsPeel: 4 med onions, quarteredWash all vegetables well.Place vegetables in large pan, drizzle with olive oil and toss well.Sprinkle with 1 pkg your choice Cali Spice Mix or a combination of ½ pkg Cali Garlic Gusto½ pkg Cali Herb MedleyToss well to distribute flavor.Barbeque approx ½ hour, tossing occasionally.Serve with Cali Herb Roasted Chicken – see recipe at www.califinefoods.comServes 4 -6 Cali Moves to Michigan! Congratulations Melonie!*Melonie Katz is a devoted Mom of two children, a self-taught gluten-free chef and owner of ‘SillyYaks’ an on-line celiac support group. Melonie’s daughter, Cayla was diagnosed with Celiac Disease at nineteen months. Getting the right diagnosis was a terrifying experience that took many months, doctors, misdiagnosis and serious malnutrition. When Melonie learned that the ‘cure’ for Celiac Disease was to remove gluten from Cayla’s diet she quickly nourished her daughter back to optimal health and turned terror into determination by embracing a gluten-free lifestyle for her family, friends and community. Today Melonie shares the joys and challenges of gluten-free living with other celiac families by chairing R.O.C.K (Raising Our Celiac Kids) in Northern Virginia. Cali 'Goldfish' Crackers Made from American Cheese2 slices American cheese (not "cheese food") Sprinkle with ONE of the following seasoning mixtures: 1/2 teaspoon salt , 1/8 teaspoon chili powder, 1/8 teaspoon garlic powder 1 tsp. Cali Herb Medley 1 tsp. Cali Garlic Gusto 1 tsp. Cali Spicy Fiesta Directions For all crackers, preheat oven to 400 degrees F. Stack the slices of cheese & cut it into 16 small squares or cut with mini cookie cutter. (If you are making them into goldfish shapes, you will need to carefully cut the slices of cheese with a small cookie cutter.) I purchased my small copper fish shaped cookie cutter at www.coppergifts.com (see Fish Cookie Cutter, Mini, $5.95) and then click on the keyword "fish" or "mini". It is much easier to make these crackers in small squares, but it is possible to do the fish cut-outs. Separate the pieces, and transfer them to a small bowl. Add CALI Spice Mix & toss to combine. Arrange the 32 or so cheese pieces in 4 rows of 8, on a parchment paper-lined baking sheet, leaving as much space in between each as possible. Stack the Colby-Jack slices and cut them into about 24 small pieces. Arrange them on another parchment paper-lined baking sheet in 4 rows of 6-without any seasonings. Bake both until well-browned and crispy, about 7 and 7 1/2 minutes. If undercooked, they'll be soggy, so don't be afraid to check them and put them back in for more time, if needed. Cool the crackers completely before serving-as they cool, they'll crisp up. Store on the counter in an airtight container for a few days. You can serve with salsa for dipping.
