Guest guest
This is the recipe for muffins I make, on average, once a week (often 2-3 times!) It measures out to be 1 tbsp flaxmeal per muffin (which is half of the recommended amount.) I'm always trying to find ways to get my husband and kids to eat healthier so I feel very good about these muffins. Also, I may have posted this recipe before, but I don't remember.> >Chocolate Chip Banana Flax Muffins>>> >Wet:2 eggs (or 1 egg and 2 yolks)small container NSA applesauce (1/2 cup)1/2 c packed brown sugar1/3 c milk2-3 ripe, mashed bananas3/4 c flaxmeal> >Dry:1-1/2 cups GF flours (1/2 c chickpea, corn and amaranth/tapioca flour is best or other combo. The different flours turn out slightly different consistency of muffins, but all have been good. I haven't used any rice flours, however, and think they might dry it out too much, actually)2 tsps baking powder1 tsp cinnamon1/2 tsp Xanthan gum1/4 tsp salt> >1/4 c mini semi sweet chocolate chips1/4 c milk chocolate chips (optional)*I usually use 1/2 cup of regular sized chips and only 1/4 mini chips. My husband loves a combo of 1/4 c dark chocolate chips and 1/4 c milk chocolate chips, but I vary this all the time> >Preheat oven to 350.> >Mix wet and dry ingredients separately. Add chips to dry. Stir wet into dry till just mixed. Spray 12 muffin tins. Put in batter. Bake 26 minutes. Let sit 5 minutes in tins. Remove.>> > >I also make healthy, flax filled muffins and have this for those on the go days.> > Would you mind sharing the recipe. I had a lovely gluten filled flax muffin recipe that I made prior to diagnosis. I would *love* to find a GF version. > > >
