I simmer mine in a frying pan with just a bit of water and a touch of apple

cider vinegar or lemon juice. When the thickest end is fork tender, they

come out and I eat them with mayonnaise. YUM!! One of my favorite

vegetables!! And this year the ones I planted 3 years ago are big enough to

pick!! Double Whooppee!

I wish I could find a way to make asparagus so that I'd like it. I

like nearly everything, but hate asparagus. My husband and daughter

like it, so I know they wish I made it more. Oven roasting seems to

I wish I could find a way to make asparagus so that I'd like it. I

Asparagus is included in the Phase 1 recipe of Oven Roasted Vegetables. Have you tried that? It's really yummy!Doreen

even more HATE IT..then.... simply don't eat it. There are tons of

veggies out there from peppers to pea pods, turnips to tomatos. You

don't have to be a martyr and eat something you just do not care for.

Why torment yourself, this is supposed to be fun..LOL Besides Asparagus

is pricy; why bother with an expensive veggie you don't care for?

are you missing? Phase 2, a dairy? A fruit? If you have had enough

protein for the day (something our diets are not usually low in)then

concentrate on the other two. A yogurt perhaps and a couple dried

apricots would be 'enough' to keep your metabolism going and get some

added nutrition in before lights out.

It really is eating to live, not living to eat,IMHO. Lucky us

sometimes we do get to do both.

Nah, I don't do that. They can eat whatever I make unless I find some

recipe I like.

Just make two vegetables the asparagus and something else. Then everyone can have two veggies if they want and you will stick with one and pass on the asparagus. Gosh, sometimes I have four choices of veggies on the table!

Try peeling the Asparagus ( Child Does), and then in a saute pan, put cold water and a little salt and asparagus, bring to a boil and cook till crisp tender. It stays green this way, and is not stringy or mushy and its Great!

I've got days like this, too. Often I'm not very hungry for lunch at noon,

so I eat a small snack instead, just to keep the blood sugars from crashing.

It helps me get all the way to dinner, a proper meal.

Two veggies is all I have at each meal, so we can each eat two

different veggies. I honestly don't feel like making yet a third food.

Plus, the leftovers of the asparagus will just sit, since nobody but

me eats leftovers.
