When I was mixing it up I was a little leery of it because it had a very strong *earthy* smell - maybe what others refer to as *beany*. Anyway, I decided to put a lemon glaze on top to try to hide that flavor. Man - it was delicious!!! I would bring this to a potluck any day. Lemon Glaze (courtesy of Betty Crocker) 1/3 C butter 2 C powdered sugar 1-1/2 tsp. lemon juice 2-4 T lemon juice Melt butter. Stir in powdered sugar and 1-1/2 tsp. lemon juice. Add the remaining lemon juice, one tablespoon at a time, until you have the right consistency. Spoon over cake. FYI - I made mine in a bundt pan, cooled it down on the counter, then stored it overnight in the refrigerator before I made the glaze. My mom wants me to be able to have dessert when I visit her, and she loves bundt-style cakes (she's probably gluten intolerant, but tested negative for celiac). I've tried the Sylvan Border Farms lemon cake, and you're right, it's fabulous.
