All it is is ground turkey, ground or shredded carrot/celery/onion/garlic and a 10 oz box thawed/squeezed dry of chopped spinach. (heck you could put in any veggie you liked) add an egg white, a bit of yellow mustard and what ever spices you wish and you have the base for a hamburg type pattie or you can put it in a pan and treat it like meatloaf. They are good cold or hot. I don't like meatloaf but this is just fabulous. This serves 8. 6 oz no salt tomato paste 1/2 cup dry red wine 1/2 cup water 1 minced garlic clove 1/2 tsp dried basil leaves 1/4 tsp dried oregano leaves 1/4 tsp salt 16 oz ground turkey breast 1 cup oatmeal 1/4 cup liquid egg substitute 1/2 cup shredded zucchini Preheat oven 350. Combine paste, wine, water, basil, oregano & salt in small saucepan. Bring to a boil, reduce heat to low. Simmer uncovered for 15 minutes. Set aside Combine turkey, oatmeal, egg substitute, zucchini & 1/2 cup tomato mixture in a large bowl. Mix well. Shape into loaf and put in 8 x 4 ungreased loaf pan. Bake for 45 minutes. Discard any drippings. Pour 1/2 cup of remaining tomato mixture on top of the load. Cool 10 minutes before slicing.
