Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 The atmosphere was great yesterday, it was gloomy but rain fell last night. My breadmachine wheat bread came out perfect (I never have really mastered the breadmachine in the 7 yrs I've owned it for 100% success 100% of the time) and my Gluten Free bread was my first completely eatable success!!! I used the Everyday White Bread Recipe from the Recipe files section here. I mixed the ingredients dry into warm wet using my lift bowl KitchenAid (placed a bowl of rather hot water under the mixing bowl to bring the wet ingredients up to about 110 degrees for yeast development). The dough was the consistancy of cake which is what I have not been able to acheive previously. Being a wheat bread baker for 10 years, it is hard to believe that cake batter turns into a bread loaf. I followed the rising directions exactly and the bread was bubbling out of my pan!!! So that is something I'll have to work on, I covered it with wax paper as directed and that probably caused the ever so slight concave fall in the loaf, it didn't recover after I peeled the wax paper off. I covered the loaf with foil the last 20 min of baking b/c it was starting to turn too brown. It was light in texture like sponge cake. Tasted great and the crust in the pan that I sprayed with oil was crunchy like pan pizza crust. Yum!!! Rejoyce VA Quote Link to comment Share on other sites More sharing options...
