Margie - There are several very good and easy chocolate cake recipes

in the files section of the site. Yes, you can sub xanthan for guar.

No, potato start and potato flour are not the same thing (and are not

interchangeable).

Now, time to get cooking! :)

The recipe Cari posted to the list months ago (it's in the files) is

amazing. And it doesn't require xanthan or guar gum. :) My non-

celiac friends love it and gobble it up. It's that good.

Potato starch and potato flour are not the same thing.

my birthday was on saturday. my twins just used our regular chocolate

sheet cake recipe (that we have used for years) and replaced the wheat

flour with GF flours and added xanthan gum. it tasted really good.

no one would have known the difference.

My box of potato " stuff " says " Potato Starch Flour " So, is that

potato starch, or potato flour?

for my daughter's birthday and it was probably the best gf cake I made to date.

My other daughter who does not have cd couldn't get enough.

The cakes I have made in the past were dry, this one was moist and had the

same texture as non gluten free cake.

It worked great for our family, hope this helps

Hi Margie,It may be too late to help you with your birthday cake, but if you're looking for a fantastic chocolate cake mix, Sylvan Border Farm makes one that is so good I've given up making them from scratch! Their website is www.sylvanborderfarm.com.I just made one for my own birthday and used GF icing--everyone loved it! They also make a yummy lemon cake mix and a fantastic pancake mix. They have an all-purpose flour mix, too. It's definately worth having a few cake mixes om hand for special occasions--I hate to admit just how often we devour that chocolate cake!
