Speaking of flour tortillas....I wish I could find a recipe (that doesn’t call for purchasing a mix) that my kids and husband would like. I tried the recipe in the Yak files....but my kids didn’t care for it. If anyone has GF flour tortilla recipe they absolutely love, would you send it out pretty please! In fact I can't tell the difference between these and the Mission flour ones we eat (non-GF) I got this message from Bobbie Coughlin on the Delphi Forums board. I don't use two kinds of rice flour, I only use brown rice flour, and I have a pie mat that I roll my pie crust in, so I spray the inside of that with Pam and then roll them out: This recipe is from, I think, the Texas support group and makes wonderful, pliable, floury tortillas. & #160; Belive me--it makes absolutely fantastic tortillas. If you dust them with rice four when you roll them, you'll also get that floury texture that the original kind has. They hold up to juicy fajitas. & #160; My whole family eats them and enjoys them, even though I'm the only celiac. Now, one needs to be adept to make them round, which I certainly am not Mine are pretty funky shaped, but who cares as long as they taste great? 1/4 cup each cornstarch, tapioca flour, potato starch, white rice flour and brown rice flour 1 tsp salt 1 1/2 tsp xanthan gum 1 generous tsp baking powder 1 1/2 tablespoon oil 1/2 cup water, more if needed Mix dry ingredients and add water. Let rest 10 minutes. Divide into balls, roll into tortillas and cook on a hot skillet. The Pepito tortillas are found in the refrigerated section by the grated cheese or cold salsas. I've found the Pepito brand in Market Basket. I put ham and cheese inbetween 2 tortillas, heat it, and slice it like a pizza. quick easy lunch to take somewhere. tastes good cold too. Just like a sandwich but thinner and sliced funny, but no crumbling! I use these for lots of things... sandwich style, quesadillas, & super-thin crust pizzas(also good for a low-carb meal). But I almost never try to wrap them because they crumble. Aren't you scared about the plastic leaching into your food? I've read that unless plastic specifically says it's microwave-safe, that it will leach chemicals into your food. Just FYI.
