Guest guest Posted August 8, 2002 Report Share Posted August 8, 2002 Hi Tonight, I'm trying a variation of a recipe by Ray - No-Pain Lo Mein .... from http://www.foodtv.com I'm using frozen stir-fry mixed veggies, canned sliced mushrooms, onions, garlic, low sodium soy sauce, and sesame oil. I'm also adding cooked shrimp to it. I don't see it as 4 servings, though, since a pound of pasta = 8 servings. Also, the amount of veggies and shrimp added should double the volume of the pasta. So, I see this as 8 very generous portions when done. I figure each serving as this - though I won't be sure until I actually finish preparing it: 1 cup cooked pasta = 4 pt 1 tsp oil = 1 pt 1 TBS lite soy sauce = 0 pt 0 point veggies = 0 pt 12 shrimp = 3 pt Yield: 8 servings - - 1 serving = 8 pt Here's the original recipe, which I am gonna " adjust " - - No-Pain Lo Mein Recipe courtesy Ray 2 TBS (2 turns around the pan in a slow drizzle) vegetable or wok oil 1 cup (2 handfuls) snow peas, halved on a diagonal 1 red bell pepper, seeded and cut into match stick size pieces 1/2 pound assorted mushrooms (shiitake, straw, enoki, or oyster), coarsely chopped if necessary 4 scallions, thinly sliced on a diagonal 2 cups (about 4 handfuls) fresh bean sprouts 2 inches fresh ginger root, minced or grated with hand grater 4 cloves garlic, minced 1 pound lo mein noodles or thin spaghetti, cooked to al dente and drained well 1/2 cup aged tamari soy sauce 1 TBS toasted sesame oil, several drops Heat a wok-shaped skillet or large non-stick skillet over high heat. When pan is very hot, (it will smoke a bit) then, immediately add the snow peas, epper, mushrooms, scallions, and bean sprouts. Stir fry for 1 minute to flavor the oil, then add the ginger and garlic, and stir-fry 2 minutes. Add the cooked noodles and toss to combine. Add the soy sauce and toss the ingredients to coat noodles evenly with sauce. Transfer the lo mein to a serving platter and garnish with a drizzle of toasted sesame oil. Cook's Notes: Wok oil is infused with ginger and garlic and is widely available on the International Foods aisle of the market. Cooked shredded pork, chicken, or small de-veined shrimp may be added to this dish in any combination. My oldest, Jessie, is going out at about 5 pm with a friend's family to a water/ amusemant park, so I am one short for dinner and hate to make anything too involved since the littler ones dont appreciate it... I haven't eaten as yet today. I think I'll just have some crackers and soup to settle my tummy. Will list what I end up eating tonight after the dinner.
