I just mixed up a pan and we'll see what the critics here have to say. I also added ground up walnuts mixed with a little cinnamon and sugar on top of the apples. It's in the oven now and smells really yummy already and will be a nice treat for a very cold evening. :-) Polish Apple cake 1 3/4 cup sugar 1 cup salad oil 3 eggs 1/2 tsp. salt 2 cups GF flour 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. vanilla 2 cups chopped apples (I've always used Granny ) Mix all but apple together. Everyone of my crew came up while it was baking and asked what smelled so good...and then couldn't wait til it was done!! But for recipes like this I would use any of the Gluten free all purpose flours I have on hand. Right now I have Beths, and Bette's and Bob's Redmill. I'm on my 2nd piece and its still hot enough to burn my mouth, but its so good! Walnuts would be a great addition to this.I used Beths all purpose GF flour and vegetable oil. Mine sank just a little in the middle but that had no effect on the taste!! Since my family knows it's GF they were kind enough to save some for me and I'm enjoying it for breakfast with my coffee!!! My daughter even came in this moring and said if it weren't GF she'd ask for some .... kind of her way of asking without feeling guilty I guess. But since it doesn't take much flour and the rest of the ingredients aren't expensive I told them they don't need to worry about eating it too. I sure as heck don't need to be eating the whole pan myself!! So of course then she hurried to get some in case I decided to change my mind!! What I really like is now I have something good and easy to make when I have friends over for coffee or I need a dessert for a pot luck (not that I've been to one since Diagnosis, but just in case.) :-) in VA Re: Polish Apple cake I hope it came out well for you.
