What's for Dinner???

Hi Everyone,

I made the recipe below for dinner last night and it was yummy and easy! It is one that I modified from a magazine that I received.

Four Layer Hamburger and Macaroni Casserole

Preheat oven to 400 degrees.

Prepare two boxes of GF macaroni cheese. I cooked 1 1/2 bags of Tinkyada Elbow Macaroni and then added butter, milk and 1 pound Velveeta as I did not have any of the box macaroni and cheese. Add 1 cup sour cream and mix well.

Brown 1 1/2 -2 pounds ground beef and drain. Add one package of McCormicks Mild Taco Mix and 1 cup water and heat thru.

Spray a 10X15 glass dish with cooking spray. Pour half of the macaroni and cheese mixture into the casserole dish. Top with the hamburger mixture and then spread the rest of the macaroni and cheese mixture over the top.

Crush about 1/2 cup tortilla chips or potato chips and sprinkle over the casserole. Also, top with about one cup of shredded cheddar cheese. You can also add about 1 cup diced tomato before baking or top with salsa or pico de gallo at the table. Bake for 40-45 minutes.

This was a real hit with my family. I hope you enjoy it as much as we did.

PS I like to modify recipes, so I can see adding chopped green peppers and/or mushrooms to this very easily.

Thanks for sharing Barb, this sounds like something my crew would enjoy. I'm going to try it this weekend.

Tonight was Gluten Free Meat Loaf and french cut string beans and a salad.

I make our meatloaf a bit spicy and with the seasonings, eggs, and GF breadcrumbs, no one even knows it's GF until they see me eating it!
