old cookbooks... from BC

Hi Esther,

I’m with you on the cookbook

conundrum. I love cookbooks. I’m looking at my four shelves of cookbooks

(and additional shelf of food mags) and sighing these days. I was already

sighing before going gf because so many of them don’t support the weight

loss and weight maintenance program I’ll also need to be on for the rest

of my life J

I think I’ll let go of some of them—“How

To Bake” for instance, which is gorgeous but very wheat based. There’s

no hurry, though. I might skip through them and see if there are any gf gems I’d

never have noticed.

I’m starting my own personal

cookbook in a 3 ring binder. The recipe card thing just doesn’t work

anymore anyway since I print so many recipes from online. I might copy some

recipes out of the less usable cookbooks to put in my binder then let go of the

cookbook itself. I’ll need the shelf space for the new gf cookbooks I’ll

just have to have…

I’m interested in converting my

favorite recipes, but not in the ones I’ve never tried anyway. There’s

a multigrain scone that we’ve really loved. I almost succeeded last week

with a good imitation. I’ll post it when I get it right.

There’s no need to let go of the Joy

of Cooking-I consult it for everything. Except it just occurred to me that

there’s probably flour all over the baking pages of that one! Hmmm.

Someone spilled coffee on it once—Maybe I deserve a new one? I might let

go of “The More with Less Cookbook” , though I do approve of the

philosophy of simplicity there, most of the recipes are wheat or barley-based

and high-fat to boot.

Esther - I still collect cookbooks - I could never through them away or

give them away. It's true I am not the celiac in our family - but I do all

of the cooking and make everything gluten free so that we can all eat the

same meal. I find it exciting to convert a really interesting recipe from

one of my many cookbooks to gluten free by substituting whatever I have on

hand - or if I plan in advance (almost never) then I can get the ingredients

I need to make the substitution. I feel like you would be letting something

else go that you enjoy and you would miss your cookbooks so much! Besides

there is so much good reading in those books besides just recipes! (How

many cookbooks in your collection? Do you have them all together in one

place? That's what I hope to do - but right now they are scattered in a few

bookcases - but near the kitchen. We recently built a window seat in the

breakfast room - and it is my intention to build bookcases surrounding it so

that all of my cookbooks can be in that room and I can read them at ease!

Most cookbooks can be salvaged, although I would probably get rid of

a book of gluten yeast breads or other " hard to convert " baking

recipes. Savory meals are usually just a matter of substituting a

little flour here or there, or using gf pasta instead of regular. I

found the old standard " better homes and garden " and " betty crocker "

reasonably useful when i moved away from home- I just skipped the

yeast bread chapters. Personally i wouldn't kill yourself trying to

adapt hard things like that when there are plenty of GF recipes that

will turn out better anyway. Things like pumpkin bars or cookies are

pretty easy to adapt. The more fat and sugar, or smooshed veggies or

fruit is in the bread, the better it will turn out GF.

And trust me- I LOVE collecting cookbooks too... ;) Which explains

why i have so many! The type you accumulate from now on may just be

a little different, that's all.

I've kept mine and occasionally will convert my old recipes to gluten free as I need them. Did you know the dumpling recipe in Betty Crocker's regular cookbook is easily adapted by substituting gluten free blend (Bette Hagman) for the flour and adding a teaspoon of xanthan gum? The muffin recipe works well with the substitution as well.

There is one cookbook I will probably never use again, and which I was so

excited to get last year at Passover. It is the Matza 101 cookbook, which shows

how to use matza in amazing ways. Well, that's one I won't be using any time

soon!
