Guest guest Posted January 27, 2006 Report Share Posted January 27, 2006 Hi everyone, Just wanted to share that I made the Mock McNuggets from the recipe file tonight. I followed Melonie's advice and used ground chicken (1lb.. perdue bought at A & P) and added the egg to the chicken instead of dipping it. I baked them at 325 (wasn't sure about that.. didn't see that on the recipe) for about 20 minutes and turned them 1/2 way through. AWESOME!! We told our 4 1/2 year old daughter who doesn't have cd that we " borrowed " the recipe from himself. She is a little reluctant to try all the new and exciting gf foods coming out of our kitchen. Anyway.. they loved them. I also made a few chicken patties and dh and I enjoyed those. Thank you so much!!!! We are so happy about this.. and appreciated the extra advice about freezing them etc. Just a quick question... do you most of you have a second fridge with a good size freezer in it? We have a side by side and have come to realize that we need extra freezer room for our trips to out of the way food stores, online ordering etc. Also.. dh and I did the ttg, igg, iga celiac sprue bloodwork today. We also did the gene testing too. Our dh (4 1/2) ttg came back negative but they didn't do the gene testing. She has no symptoms whatsoever right now. I don't think I am symptomatic other than usual tiredness probably from having 3 young children and I do have joint pain in the morning. DH doesn't complain of anything so not sure. The testing is going to Quest. Our cd son's bloodwork was initially done at quest and during biopsy they retested through prometheus. Both results were similar. And biopsy confirmed. (I think that part is missing from the recipe... will have to get that added). I like your comment on borrowing the recipe from Mc in order to get your little one to try them. Whatever works, right? The key to that recipe is the GROUND chicken, and using the potato chips. All the other parts can be improvised as needed. (you can also try it with Sour Cream & Onion Chips, or BBQ chips if you was some nuggets with ZING!) I always have to give credit to my neighbor (and one of my best friends back in San Diego) who is responsible for suggesting to me that I try to buy ground chicken. I was doing everything in my recipe... but I was using chicken breast tenders and cutting them into chunks. They tasted good... but just weren't the consistency of a " McNugget. " suggested I buy some chicken and grind it (or buy some ground chicken, which I found EVERYWHERE in San Diego)... and then the Magic McNugget Imposter began..... Sometimes Ralph's would not have it already ground, but the butcher will grind it for you (at no extra cost). Henry's seemed to have it ALL the time, and it would even be on sale quite often. I believe I also found it at Jimbo's (Rancho San Diego area), and at Trader Joe's, but I'm not certain of those two. I definitely never had a hard time finding it. I was surprised... b/c when my neighbor suggested " ground chicken, " I thought... " yeah, right... where in the heck am I going to find ground chicken without going to an all-out butcher. I was wrong! I haven't had any problems finding it over here on the East Coast now either. I'm not sure what people use ground chicken for (besides " Mock Nuggets " ), but the thought of making a meatloaf or meatballs out of ground chicken doesn't sound like something my family would enjoy. I also found it on occasion at the military commesary at 32nd street (San Diego). Hope you have some luck finding ground chicken... chick- awn..... awn.... awn.... (for those of you who have seen that silly commercial).
