Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 I make salem crumpets from the gluten- free gourmet cooks fast and healthy or crumpets from More from the Gluten free Gourmet and then add 1 tbsp onion soup mix from G.F.G.C.F.H on pg. 63. [this is her suggestion, not my creative idea]They are WONDERFUL fresh from the oven, and very good afterwards as well.. perfect as a salmon- burger or tofu-burger " hamburger " bun. Actually I usually double the recipe, and in that case it would be 2 tbsp. onion soup mix. I make them in circular english muffin molds i ordered from ener-g foods, and they rise beautifully. Here's the recipe for Bette's onion soup mix (although i think you could use any GF powdered onion soup mix), and if you don't have the crumpet recipes from any of her cookbooks I can post them too (though most of us probably have the cookbooks anyway). 1/2 tsp onion powder 1/2 tsp. onion salt 1/2 tsp sugar 1/4 tsp kitchen bouquet browning sauce 1 tbsp vegetable oil 1/2 cup minced dehydrated onions 1 tbsp potato starch flour Combine everything except the dehydrated onions and flour. Mix thorougly, and then mix dehydrated onions in thouroughly until even color is reached. Stir in potato starch flour at the end (to keep flakes separate) Store. Makes 1/2 mix (equiv. to 4 packets). I guess you could use it in any bread mix (maybe 1 tbsp or more for a small loaf?) to make onion bread... hmmm... yum! > > , > > You MUST post your recipe for onion crumpets.
