The idea (or part of it) behind the temp thing is that heat " pushes " saponification. You need your batch to stay warm enough for that to happen. I kind of follow this " rule " of thumb (my own rule made by me for me). 2 lbs or under I prcess at no less than 110 degrees. 3-4 lbs at 105, 5-6 lbs 95-100. When I do 8 or more lbs I drop the temp to 80-85 degrees.
