TIA, & Mike 909 980-2962 Re: FIBER FOODS One thing you can do to make " any " GF food high fiber is to grind flax seeds and throw it in to whatever you are cooking. It has " no " taste (Myself and 2 kids can't taste it, my DH swears he can but doesn't mind the taste) and it has TONS of fiber. The other thing I would look into is Heartland's finest products. They are bean flour based and have a lot of fiber as well. One serving of Mac and Cheese has 5 grams. The amazing thing about their pasta is that it doesn't have that wierd bean taste! Truly it is one of the best GF pastas we have ever had. Their Cer-o's cereal is great dry but I think it tastes kind of funny when you add milk, but it has a lot of fiber too. I just dug out my copy of “Healthy Foods” from the Nutrition Action Newsletter. Their “best bites” foods which have at least 10% USRDA for fiber are: Grains (5 oz, cooked)—Quinoa, Amaranth, buckwheat groats (aka Kasha. We like to eat them uncooked—crunchy!), wild rice, Brown Rice. All of the beans come in at over 25% for 1 cup cooked and many at over 50%. I don’t see any GF cereals on the list, but the standard for good fiber is 6 grams per serving. Highest fiber veggies are sweet potatoes, pumpkin, carrots, potato, squash, peas, avocado, artichoke, potato with the skin and parsnip. Highest fiber fruits are: blackberries, raspberries and persimmons. Prunes are next and canned fruit seems to be nearly fiber-free! Can you add magnesium to his supplements? My daughter is an obvious Celiac, and my son, Ben, is a non symptomatic question mark (for lack of better words HEE HEE!). He is VERY tiny and has terrible constipation, which we have been battling for years. Well Ben has been on a GF diet for about 2 months now--very hard on him, since he has been addicted to wheat. In that time he has almost grown a full inch, so we truly believe he may be a Celiac... Anyhow to combat the constipation, our GI has given us a homework assignment to find GF fiber foods to feed Ben. So PLEASE, PLEASE, PLEASE help me with this. What are some GF fiber foods I can feed my son? I take an additional 400mg per day. Get it in the vitamin aisle—I happen to be using Wild Harvest brand just now. Be careful—I do not ever have the big D problem, but too much mag will create it! I have seen 200mg tablets which might be better for a child. I didn’t see how old Ben is. Probably you’ll want to ask the doc. Milk of Magnesia is just liquid magnesium—the label gives a child’s dosage. I don’t know if it’s better or worse than taking the capsules. Laurie lbilyeu@... Sometimes it's the only thing that gets me up in the morning! : ) This weeks front page article is titled Don't Let Boredom Win Against the Grain. In the article they say a little blurb about gluten free grains and celiac. But the descriptions of the different grains are what impressed me the most. The Amaranth for example....the first word is Gluten-Free. Not buried down in the description! It's like that on all "our" grains! Prett cool!
