Guest guest Posted January 18, 2006 Report Share Posted January 18, 2006 Made a easy yummy, healthy pot of soup for dinner last night. Served it with slices of natural cheddar cheese and applesauce. Roasted Garlic Potato Soup 4 medium red potatoes, cubed 2 medium carrots, diced 1 medium onion, chopped 1 stalk celery, chopped 2 strips bacon, cooked and crumbled ( I used turkey bacon) 2 14 oz. cans chicken broth with roasted garlic ( I used 28 oz water, 3 tablespoons Tone's chicken base and 5-6 cloves roasted garlic, chopped) 1 cup milk 1 cup instant potato flakes Place potatoes, carrots, onion, celery and broth in sauce pot. Heat to a boil and cook over low heat 15- 20 min, or until veggies are tender. Remove from heat. Stir in milk, potato flakes and stir well. Makes 4 generous servings To roast garlic: cut head of garlic in half horizontally. Drizzle with olive oil and sprinkle with salt and pepper. Wrap in foil and bake 30 - 40 min in a 350 oven/toaster oven. Easy and boy does it smell wonderful!!!!! Enjoy - Kerri Yahoo! Photos Ring in the New Year with Photo Calendars.
