Which Bette's recipe? And as I say her name in my head...is it Bette...like Bette Midler or Bette like Betty? kathi"Calacci, Bridget" wrote: I use Bette's recipe, and I reduce the liquid by 1/4 C and I use a 350 degree oven. I also let my bread rise in the cold oven until it's almost where I want it, then I turn the oven on and let it preheat with the bread in it. It continues to rise, and then when the oven is preheated (the beeper goes off to tell me it's preheated) I set my timer for 10 minutes. After 10 minutes I cover the bread with foil and bake for the remaining amount of time. I then take the internal temp of the bread. It should be 190 degrees...I use my meat themometer. With therecipes I have tried so far I have the same problem every time. Therecipes are followed meticulously and then put in a 400 degree oven.Seems very hot to me =( The bread begins to look very beautifulpuffed up and golden. After the first 10 minutes I place somealuminium foil over the top and continue cooking for the rest of thehour as instructed. Then all heck breaks loose....the bread puffs andpuffs and puffs and gets a very dark almost burnt crust. I panick andtake the bread out at 45 minutes instead of an hour and the breadcollapses into a weird heap =( The bread is cooked all the waythrough but it looks like it's from outer space =( What am I doingwrong. One bread was a tapioca bread (Hagman) and one was a Montinabread (wonderful flavor).I have checked my oven temperature and it is accurate. The crust isso dark and overcooked...not pretty or tasty. =(Any advice is appreciated =) in NY
