I make both the Tapioca bread and the True Yeast bread (which I much prefer)

I have been making some meeger attempts at baking bread. With therecipes I have tried so far I have the same problem every time. Therecipes are followed meticulously and then put in a 400 degree oven.Seems very hot to me =( The bread begins to look very beautifulpuffed up and golden. After the first 10 minutes I place somealuminium foil over the top and continue cooking for the rest of thehour as instructed. Then all heck breaks loose....the bread puffs andpuffs and puffs and gets a very dark almost burnt crust. I panick andtake the bread out at 45 minutes instead of an hour and the breadcollapses into a weird heap =( The bread is cooked all the waythrough but it looks like it's from outer space =( What am I doingwrong. One bread was a tapioca bread (Hagman) and one was a Montinabread (wonderful flavor).I have checked my oven temperature and it is accurate. The crust isso dark and overcooked...not pretty or tasty. =(Any advice is appreciated =) in NY
