Sally,

My son also has major SI issues and has been GF now for 3 years. It

was very scary at first wondering what he would eat. He also has

social and cognitive delays so when we began he did not understand

that GF pretzels were ok but other pretzels were not. We began simply

with the things he liked and new were GF. Variety was not occuring at

the beginning. I had to get used to the diet as well. Now we travel

and he is still pretty limited in what he eats but he is growing, his

TTG was 1, we can go out to eat and he will occassionally be bribed

into adding something new to his diet. If you have questions please

feel free to email. Others have answered the initial questions you

posed. I will say you often have to try different varieties of things

to find what your child will like. Good luck. I have walked in your

shoes!
