Guest guest Posted March 29, 2003 Report Share Posted March 29, 2003 @@@@@ MOCHA MOUSSE Yield: 6 Servings Source: " Light and Easy Diabetes Cuisine " by Betty Marks INGREDIENTS - 1 cup part-skim ricotta cheese - 1/4 cup low-fat (1%) cottage cheese - 1 teaspoon ground cinnamon - 2 teaspoons powdered instant coffee - 1/2 teaspoon pure vanilla extract - 1 tablespoon frozen orange juice concentrate - 2 tablespoons blanched slivered almonds - Fruit, ladyfingers, graham crackers or baked pie crust (optional) DIRECTIONS Blend all ingredients except almonds in a blender or a food processor fitted with the metal blade. Top with almonds.
