Guest guest
Thanks Trudy, I love random made-up recipes...some of our best meals are creative uses of leftovers! Last night was a make your own dinner (usually do this when everyone has plans and mixed schedules, this also works if the rest of the crew wants to order pizza and I just make something for myself) I wasn't in the mood for soup but ended up making the Progresso Chicken Enchilada soup and mixing in rice, cheese and some tortilla chips in the bowl. Made a satisfying meal. I will have to try toasting the corn tortillas, that sounds good. Thanks for sharing the tip. :-) in VA Yummy! I made up a new crockpot "dump a bunch of random stuff in the pot" recipe. This one is a keeper! I had half a bag of powdered queso tortilla soup (Safeway brand). I put that in with four chicken breasts, a can of corn, a can of kidney beans, a big can of diced tomatoes and a little water. What a great smell to come home to. Last night we had whole breasts and sauce on rice and it was pretty good, but a bit mild. Tonight, when I went to have leftovers I decided to shred the chicken and eat it like soup. Turns out the majority of the cheese powder was stuck to the bottom! LOL! Man - it was good! I also came up with a new gluten-free treat. I was feeling sorry for myself because I couldn't have crackers or toast with my soup and we didn't have any tortilla chips. For some reason I decided to toss a couple corn tortillas in the toaster and they were awesome! By the time all was said and done, I had toasted about 8 tortillas and DH, DD and I were all gathered around my soup dipping away. ) Trudy
Guest guest
Yep that's the soup, it's become one of my favorites (and with my luck it will be one of those that doesn't stay on the market....so everyone buy it!!!) Re: Yummy! Oh that sounds good too! Are you talking about their low-carb cheesy chicken enchilada (or whatever it's called)? I love that stuff!!! Although I wish it were also low-fat. ) --Trudy San , CA "People who believe in absurdities will eventually commit atrocities." ~Voltaire -------------- Original message -------------- ended up making the Progresso Chicken Enchilada soup and mixing in rice, cheese and some tortilla chips in the bowl. Guest guest
My current favorite - and the one I'm eating as we speak (type?) - is Harry's chicken tortilla soup. It comes in the refrigerated deli case (I get a two-pack at Costco) and is concentrated. Put some in a bowl, add an equal amount of water, and heat it up. Yummy!!! --Trudy San , CA "People who believe in absurdities will eventually commit atrocities." ~Voltaire -------------- Original message -------------- Yep that's the soup, it's become one of my favorites (and with my luck it will be one of those that doesn't stay on the market....so everyone buy it!!!) Guest guest
Food Lion on East Coast has it, our Walmart has it, not sure if Target carries it...check any stores that have Progresso soups, if they don't carry that flavor maybe they'd order it for you. Guest guest
It may be quite similar (maybe even better if it's from the deli case) so if you ever wanted to dress it up a bit you could probably do the same thing of adding cheddar cheese & tortilla chips. :-) in VA Re: Yummy!
