Here are some of the fillings we used: I pureed (using a magic bullet processor) DH's left over red beans, sausage, & rice so it was like a pate' and spread it in the crepe and added some shredded cheddar cheese...he LOVED it!! I pureed a mixture of 1 cup Cottage cheese & 3 TB Green Chiles that was very tasty (In fact one of my kids who cannot stand cottage cheese tasted it and requested it in their crepes and my youngest dd and I had it in our's too.) Even my husband tasted it and thought it was good and he also will not eat cottage cheese. This also would work well as a sauce to put over top too...I'm going to try it over seafood crepes sometime. My DS had a crepe with cheddar cheese mixed with chunky salsa inside and the above cottage cheese mixture poured over the top. And one DD had strawberry jam in her's and said it was the best. I think using left overs is a great option and folded over they look so nice just like something you'd get in a restaurant. Anyhow today's lunch got rave reviews from the whole family...and they thought it was a big chore for me to make them;-)...guess I could splash myself with some water and flour like the commercial and let them think I slaved over a hot stove!!! :-) in VA Quote Link to comment Share on other sites More sharing options...
