Now I have to continue for another three weeks. I can't wait to go back to gluten free. I used to wonder why my stomach hurt so after eating only toast for breakfast. Or how come I ate dinner, went to bed and woke up to run and vomit. I wasn't sick, I would just throw up and then I'd be fine. I look at food and think how bad it makes me feel to eat anything with gluten. It hasn't been difficult for me to change my way of eating because I'm allergic to Soy, so I have been already reading labels for 25-30 years. I have a really good Quinoa Bread Recipe that I changed a few ingredients in, and a Buckwheat Pancake Recipe I took from a camping book and changed it to GF, that's really good. My question is, " Do I post them on this message board or go to the recipe file? " Now that I'm back eating gluten, I can't stand the bread I used to buy! I always bought a sour dough wheat bread, or Oatmeal and Nut bread by Orowheat. I think my Quinoa Bread Recipe has much more flavor to it. Also, Buckwheat is not a real wheat, I believe it's from the Asparagus family. My mother always cooked from scratch, and I loved Buckwheat Pancakes. > > I bought one GF bread and also one mix to make bread with and I " hated " both of them. One reason we decided to do this is because when I got sick, we didn't know what would be happening with my health, so we thought we would have some fun while we could. I'm very glad I found out I have Celiac Disease, because I feel going gluten free might extend my life. Everyone who has found out they have it when they are young could quite possibly be saving themselves from an autoimmune disease that could be fatal. So, this is a good thing to find out early, and not a cross to bear.
