Guest guest
It seems to me that one reason why some people have trouble adjusting to being GF is because they are used to all kinds of things which are harder to have GF. Those of us who have been GF for a long time are used to all our GF stuff and have come to rely upon it without even thinking about it, so I think everyone should share these things that help them be GF and without which they wouldn't be able to live the same way: - my rice cooker, many varieties of rice, and always a pot of rice in the fridge to take some for lunch or any other meal. - for travel so I don't have to worry about finding GF food: Indian ready-to-eat meals which do not need to be refrigerated, no-drain tuna packets, Cabot's half-fat cheddar cheese which doesn't really need refrigeration, freshly made gorditas (thick tortillas) sold in my grocery store or rice crackers or other imperishable starches. - tupperware to take food with me, and food in the fridge to take: main dishes, rice, vegies. - crock pot, so that I can cook food without thinking too much about it and always have something in the fridge. Also, when I prepare foods, I have them in a state that I can pack them up for lunch, like I overcook (dark meat) chicken and take it off the bones after it is cooked so it is less messy to eat. - simple preparations for vegetables to always have around: baked winter squash (cut squash in half and bake on baking sheet), steamed broccoli, etc. again, so that I have food to take with me. - a big bowl of fruit for snacks. - a well-stocked spice rack. - good cookbooks filled with ideas for cooking, and the willingness to simplify recipes so that I don't have to deal with too much. - a grocery store with good, inexpensive produce. All of these things really define my experience of food; without these things, I really wouldn't be as well-adjusted to being GF as I am. (And I am still learning!) Please share your can't live withouts, and we can learn from eachother. Janet
