I love Boudin but I try not to think of what it is sacked in!!! LOL

I love shrimp ettouffe also. I like gumbo if the gruel is made right. BUT NOT CRAWFISH!! LOL My grandaughters, ages 11 and 13, have been eating them for about 4 years now. Love pepperhj c wrote:

I was more than willing to try crawfish until I saw the commercial I think it was for Louisiana or something. The guy breaks off the head and the sucks the stuff out with a big slurpy noise. Ever since then, crawdads are not on my menu. That noise comes back to haunt me.

That was interesting, some years ago a cousin in Iowa did a genealogy search on my family. My Great Grand parents moved to America from Bavaria to escape German conscription, draft. They settled in Iowa. After getting it all together we had a family reunion in Iowa at the little town they helped build. there were over two hundred. They all had the same problem I have "hefty". However I am Heinz.

Now that is interesting, Betty2!! As many many years as I have known you, I had no idea you were of German descent!! My husband and I were in Bavaria in Germany when he was in the army, and it is BEAUTIFUL country! We were stationed in Augsburg, and parts of the town still had buildings that had been bombed during WWII - the rubble had been cleaned away, but the hull of the buildings were still here - - that was in 1958, so I'm sure it has all been rebuilt by now, but it was an eerie sight back then. Germany was one of the cleanest countries I have ever seen - you never saw trash on the streets or unkempt yards - the roadways were always clean and manicured - it was just beautiful. Would love to be able to go back now and see what it looks like, but I doubt it would seem right to have Mc's and all the "Americanized" stuff that is there now!

Pepper ~~~~~ I don't eat the casing on the boudain --- just the insides !!!!! And you're right about the roux (roo) in the gumbo -- it has to be just right -- not too light -- not too dark !!!!!!! We buy the ones in jars now to make our gumbo and other dishes with roux--- saves all that stirring !!!!!! You can also make it in the oven in a cast iron skillet -- just flour -- and eliminate the oil !! Again, y'all are making me hungry for some good Cajun food !!!!!!!!!!!!!!!!! Hugs, Randie

You can rest asure that I do not eat the casing either. The thought of what they are is almost enough to turn me off from them, but, gosh the boudain is sooo good.

There is a place over by Bolivar Pennisula that has the best shrimp ettouffe and then there is a place over by Keemah that has real good gumbo.

We ate at a really beautiful Chinese restaurant today and it had some gosh awful baby squids on the buffet. YUCK.!! I just can not even begin to look at them much less eat them.
