Lots of salsas you could use. If I were vegetarian and could get my hands on it for $5 I’d consider it worth it. Laurie lbilyeu@... I am interested in your recommended cookbook, but I was wondering what percentage would be useful for someone who doesn't eat chicken, beef, or pork. I was looking on amazon and it seems to be out of print, so they didn't show the index or chapter headings. (Although it is not available new through Amazon itself you can still buy it used or even new from another seller.) Guest guest Posted January 7, 2006 Report Share Posted January 7, 2006 Here's a simple easy to make tamale or enchilada sauce that is totally GF: 5-8 peppers (Guagillo, New Mexico, or California) seeded. We've used the dried ones. Boil 5 min in 3 cups water with 4 cloves garlic and cumin. Boil separately 1 box Pomi chopped tomatos (or one large can chopped tomatos). Thoroughly blend tomatos with small amount of peppers for a mild sauce, a lot more for hot.
