I had a little left over and put in the fridge...I'm going to remix it and see if it still is ok and add some cheese and chiles...for a quick dinner for me. I made my DH red beans and rice and sausage from a packet but it has wheat in it... and the kids all left with a friend to get pizza at cici's. (LOL, no kids in the house and here we are eating gassy foods!! I stir it up in my tupperware measuring cup with a pouring spout and lid. That way it keeps for later! The starch settles so you need to stir or swirl it around before pouring into skillet! They're thicker than crepes but really good! It's easy to make, few ingredients, pretty no fail. Try it and see!! I think I remember getting 4-6 crepes out of the one batch. Enough to feed the kids breakfast anyway!! Guest guest Posted January 8, 2006 Report Share Posted January 8, 2006 I think you can make any size (and thickness) by gently rotating the pan to get the batter to spread evenly over the bottom so it can still be thin (for thicker just pour more on top). I think my pan was 6" (guesstimate) and I made two large ones and 6 half that size so I think it would make 5 personal size ones depending on how thick you make them. I put lemon curd in some and when I made the large one later (I had refrigerated it, and some settlement occured so it had to be re-mixed but tasted just fine!) I added some green chiles to the batter and I put a mixture of cheese and pureed sausage in the middle...it was awesome! My husband took a bite and asked when I was going to make enough for the whole family! Also this morning he found the recipe by the coffee pot and asked if I was making them for breakfast. I really want to find a nice seafood filling and maybe make them with a sauce on top. Any way...they are very very easy to make, taste great, and very versatile as you can put your favorite filling in and use for a meal or a dessert! :-) --- and Daron Freedberg wrote:> Does this make one big crepe or several smaller> crepes?
