Guest guest
- These sound real yummy! I am not a big blue cheese fan so I would substitute FF ranch. I will have to give these a try. One of these days I am going to buy one of those tortilla presses that cooks the tortillas. Maureen - do you have one? Sherrie K -- Re: What is on the menu Friday? I'm pretty sure we will be having Buffalo Chicken Wraps and some kind of salad or baked chips. Buffalo Chicken Wraps serves 4 6 points each (points can vary depending on what kind and size tortilla you use; mine were 2 pts each) 3/4 lb chicken tenderloins 1/2 c seasoned bread crumbs Buffalo wing sauce 4 flour tortillas Chopped tomato Chopped onion Shredded lettuce FF blue cheese dressing Shredded cheddar, crumbled bacon (optional and add points if you use these) Dip chicken in Buffalo sauce and coat with bread crumbs. Place on baking sheet and spray each piece with butter-flavor spray. Bake at 400 for 15-20 minutes Remove from oven and slice into 1 inch pieces. Put 1/2 of chicken on each burrito and add veggies as desired. Drizzle each with 2 T dressing and roll up like a burrito leaving one end open. Enjoy! ~There are no strangers here... Guest guest
Tonight's menu is a repeat of last night (since I made enough for more than 2 nights for the 3 of us in my family Ray's No-Pain Lo Mein w/ Shrimp Chicken rice soup Turkey Hill Lite Van-Choc Ice Cream *I made the lo mein using 4 packs of Maruchan ramen noodles, not using the seasoning packet and cooking the noodles in water only. I made sure I thoroughly drained the noodles as soon as they were cooked. I stir fried 4 cloves of freshly minced garlic with 1 large chopped Vidalia onion with 1 tsp ground ginger in 2 TBS canola oil + 2 tsp sesame oil. When the onion was getting translucent, I added one *defrosted and drained* bag of A & P brand stir fry veggies. When the veggies were stir fried (slightly tender), I added them to the cooked ramen noodles, tossing the mixture together gently. Then, I added a scant 1/2 cup of Kikkoman Lite Soy Sauce, and mixed gently to coat the lo mein evenly. I had cooked shrimp ready to add to each portion (1/2 cup cooked shrimp = 1 point), but I'm under the weather and shrimp didn't appeal to me, so I just enjoyed the veggie lo mein Love, Cherie
