Do you mean you got gf " matza ball " mix and " matza meal " at the kosher

supermarket? That would be something! Then I could make my Rocky Road Brownies

(yum!). Okay, now I'm kind-of actually looking forward to the challenge. At

least I feel better than I did at our first meeting with the nutritionist who

told me not to worry, " Passover is the best time for Celiacs because there are

no bread products, " and I just stared at her like she was from Mars. I'm glad

to know there are satisfying alternatives.

hehe See chickie poo!! We'll be fine if we stick together!! : ) I'd love to hear more about those matza balls!! I think I was absent on the day they talked about matza meal at a kosher store. Laurie,

I think I made 4 batches of matzah, that was not quite enough for a seder

with 9 people. I felt like I was making it constantly! This

kids really liked it and I wanted them to feel a part of the holiday and

since all their friends were eating matzah for lunch..... For 30

people, I'm thinking of 100 batches (just kidding, I hope!!). I

haven't thought about that part yet!

For the matzah ball mix and the matzah meal, I definately have a gf

version of them both. I'll tell you the name if you give me your

rocky road brownie recipe!! I don't know if you can get the mixes

year round, but I definitely got them easily during Passover. I

also found these very yummy choc covered marshmallows and bought a case

for my girls (although my husband seems to be eating most of

them!). I agree with your nutritionist, but we are more limited

than most since we are also dairy and soy free. Hopefully the last two

won't be forever!

I will get the brand names of the gf matzah balls and gf matzah meal

later.

Have a good weekend,

Even Maneschewitz comes out different every time for me. My grandmother used to add lots of egg whites to make them "floaters" not "sinkers". Time to get started testing I guess!! You're right about time though. Best not to do a side by side comparison!! : ) We really are recreating the wheel aren't we? kathi and Daron Freedberg wrote: Don't I wish we could just bless our food gf!!! I promise to get the names of the matza ball mix and matza meal. They are potato starch based. I've used the matza meal to make stuffing and I've discovered that I have to add more than I think looks right to get the mixture to be drier, more stuffing like. We use the matza ball mix and I like

it but I didn't love it at first. It was fine, but I really liked the fluffy and light texture of Maneishevitz and this gf version was missing something for me. But I waited many months and when I tried it again, it was either better than I remembered or my taste buds are forgetting my old favorites! At 04:49 PM 1/6/2006, you wrote:>hehe See chickie poo!! It's true about time changing our tastes. When we first started trying gf foods

we all hated the gf pretzels we tried, but just this week we all thought they

tasted pretty good. Funny.

Bette Hagman has a matza ball recipe, and there is one in the Special Diets for

Special Kids book. I'll have to look at them, and try both.

I guess I better get started baking those matzas. We went through 4 1/2 boxes

last year. Though I won't use them for cooking like I did, so I'm sure we'll

use slightly less. I hope.
