I felt like I was making it constantly! This kids really liked it and I wanted them to feel a part of the holiday and since all their friends were eating matzah for lunch..... For 30 people, I'm thinking of 100 batches (just kidding, I hope!!). I haven't thought about that part yet! For the matzah ball mix and the matzah meal, I definately have a gf version of them both. I'll tell you the name if you give me your rocky road brownie recipe!! I don't know if you can get the mixes year round, but I definitely got them easily during Passover. I also found these very yummy choc covered marshmallows and bought a case for my girls (although my husband seems to be eating most of them!). I agree with your nutritionist, but we are more limited than most since we are also dairy and soy free. Hopefully the last two won't be forever! My grandmother used to add lots of egg whites to make them "floaters" not "sinkers". Time to get started testing I guess!! You're right about time though. When we first started trying gf foods we all hated the gf pretzels we tried, but just this week we all thought they tasted pretty good. Funny. Bette Hagman has a matza ball recipe, and there is one in the Special Diets for Special Kids book. I'll have to look at them, and try both. I guess I better get started baking those matzas.
