Someone gave me a huge bag of amaranth flour about a month ago --- she thought she was allergic --- and I also had no idea what to do with it. Actually, I did: right away I put it in my freezer since I saw that she had moths in her apartment. I made some really nice gingersnaps with it which had fresh grated ginger --- an entire 3 " long piece of ginger that I put in the shredding part of my food processor. The recipe is from a New Way to Cook by Sally Schneider which I adjusted. I will post if I have time. They are really good and I think the amaranth complements the flavor nicely. It tastes a bit like whole wheat flour and you can just mix it together with chickpea flour and tapioca and potato starch for a usual flour mix and use it like any other flour.
