While there is no official standard for that claim in the US, companies are pretty careful since they generally have a strong aversion to lawsuits. They wouldn't label it GF unless they were sure. With the new labels phasing in, things are getting easier for other foods as well. Prior to this, gluten could be hidden as a binding agent or in " natural flavors " . Now they have to label the wheat. They can still hide rye, barley, and oats, but those aren't near as common as wheat. So, since wheat has to be declared now you are left with rye, barley, and oats. Malt is commonly from barley, although it can be from other grains, so you have to watch out for that. When starting out, it is a good idea to go to the store with a list of mainstream foods that are gluten free, like the one on the delphi forums site. Another good thing to do if you can is bring a cel phone and call on the product while you are at the store. Also, certain companies are thought to be more reliable in labeling than others - Kraft and ConAgra for instance. These are just the basics, hopefully someone else will catch this thread and supplement this with more hints.
