For mixing dough, the kitchen Aid is by far better than the Cuisinart. I love my Cuisinart, but for kneading dough, it tends to heat up enough to make it really gooey or something. The KA works great and takes all the work out of making bread! It is heavy duty enough that it works painlessly. One thought about the KA is if you mix other things than just bread dough in it, you may want to also by the pour shield. Otherwise you may end up with a big mess. It is awkward to get used to (the pour shield) but once you do (if you are like me) you wonder how you ever lived without it. Good luck. Harper wrote: Thanks Sabreena. Cuisinarts chop food. Yes, they sort of make some wheat doughs, but those

form balls (and the blades drive that around the bowl, simulating kneading).

GF " doughs " are thick, sticky batters. They need to be be well mixed (to

get the proteins in the eggs and other ingredients and the fibers in the

gums, to bind together). No food processor is going to to this well. Nor

will a kitchenaid make good coleslaw or slice your carrots (without more

attachments, at least).

Your mother may mean well (maybe she is getting you a KA for xmas, even),

but is ill informed on what is needed for gf baking.

And don't try it with a hand mixer, unless you want to replace them often as

the motors burn up (and don't use an old one from wheat baking at all --

I've never seen one that didn't have some wheat flour up in the vents that

comes out a bit as it is used on other dishes).
