Here is the recipe I'm using, plus the type of ready made frosting I use with

it:

* A good one - Carrot Cake Muffins + 0 pt frosting

1 package Betty Crocker® SuperMoist carrot cake mix

2 cups pumpkin

5 ounces water

1 1/2 teaspoons baking powder

Preheat oven to 350 degrees.

Mix ingredients until smooth.

Spray 18 muffin tins with PAM non-stick cooking spray.

Divide batter equally into the 18 muffin tins.

Bake for 20 minutes, or until tests done.

Yield: 18 cupcakes

1 cupcake with 1 tsp Betty Crocker Whipped Cream Cheese Frosting = 3 points

NOTE:

1 muffin = 2.4 points (plain, served without frosting)

1 tsp Betty Crocker Whipped Cream Cheese Frosting = .6 points
