Xanthan gum in baking

Please does anyone know the PURPOSE of xanthan gum in baking things, such as cookies? I was going to substitute Bob's Redmill baking all purpose flour to make Tollhouse choc chip cookies. Should I add xanthan gum, then? Say 2 tbspn? Or what, I wonder?
