I'll probably just throw something into the crockpot since I'm going to be working on my website all day, and then I have a car appointment at 3:00. I made some really good sorbet last night. I was watching Emerill Live night before last, and he was making sorbets and icecream on his show. It all looked soooo good! I was amazed that sorbet was so easy to make! I didn't have some of the stuff he called for, so I changed the recipe and made my own. It was good. And you get 1/2 c. for only 1 point. We all ate 1 cup each of it last night, and I have to say... 1 cup was a bit much for sorbet. LOL! I imagine you could change the recipe to use whatever you want since I did. Here's the recipe I used: Simple Sorbet Serves: 10 Points: 1 (1/2 C.) 1 (20 oz.) Can Crushed Pineapple, in juice (4.5 points) 1 1/2 Cups Water 1 1/2 Cups Splenda (3 Points) 1 C. Frozen Mixed Berries (raspberries, blackberries, blueberries), thawed (1 point) 1 C. Orange Juice (2 Points) 3 Tablespoons Lemon Juice Mix Water and Splenda together in a 2 quart saucepan. Add Pineapple, orange juice, and berries. Bring mixture to a boil over medium-high heat. Remove from heat and puree with a stick blender (or you can puree a little at a time in your blender). Use a fine mesh sieve to strain the puree and add the lemon juice. Chill the base completely, and pour into an ice cream maker. When the mixture looks like thick slush, pour it into a plastic container and place into the freezer for 1-2 hours, stirring once or twice in between. Sorry I have not been posting, was feeling very down and just out of energy for life in general, my eating has been ok but not meeting my minimum daily or journaling.
