I think I have posted this before, but I guarantee you won't find this one to be gritty or nasty tasting. It is without a doubt the best and easiest GF yellow cake recipe I've made. One caution is to watch your cooking time to make sure the center gets well done (and springy.) I live at an altitude of 1800 ft and have found some differences in cooking times with sea level baking. The recipe makes awesome cupcakes as well--I make a batch nearly every week for school lunches.

GF Yellow Cake 1 Package GF Pantry Cookie and Cake Mix*

1 Package Jello Instant Lemon Pudding (or vanilla or bananna)

½ cup white sugar

1 cup orange juice

½ cup vegetable oil

4 eggs

Pour everything into a bowl and beat at high speed for 4 minutes

Bake at 350 for 40-45 minutes.

Makes 24 cupcakes or two round layers

* Our make your own mix:

½ C rice flour

½ C potato starch

1 C sugar

1 tsp baking powder

½ tsp baking soda

1 tsp xanthan gum

Amen to this!! 's recipes are the best! You can always trust them! My oldest calls them Titanic cakes...they sink a bit in the middle, but that's where we slather more icing!! Yummmmm. What size package of pudding is needed for this cake? I have both a large box and a small and want to make it this weekend....
