It was much better than I thought. She topped it with red onions, fresh mushrooms and pineapple along with tomato sauce we both made with plain salt. I'm still waiting for the final recipe for the cheese but I had the list of ingredients and all was LID...yum! Gosh, I may gain weight from eating better instead of plain hypo! That said, since I have to do the hypo/LID thing again in a few months for my 6 month scan, I'd like to request that you post that cashew cheese recipe if you would when you get it :-). Guest guest Posted September 12, 2002 Report Share Posted September 12, 2002 Here is the recipe for Cashew cheese (for those of you with an adventurous spirit!) CASHEW CHEESE 1/2 c. (+ 2 T) raw unsalted cashew pieces 1/4 c. Brewers yeast (NOT bread yeast--you know, the kind with which you make beer!) 1/4 - 1/2 t. plain salt 1 t. garlic powder 1 t. dried minced onion or onion powder 1/8 t. Oregano (I substituted Mrs. Dash Tomato/Basil) 3 T. lemon juice (I used bottled) (I used a few drops of liquid hickory smoke for added flavor) Blend well in mixer or food processor, scraping sides frequently until mixture is crumbly--like Parmesan Cheese. Makes approx. 1 cup. Store in closed container in refrigerator. I made my own pizza with homemade Italian Beef sausage, LID pizza dough basted with olive oil and Italian spices, LID pizza sauce sliced mushrooms, thinly sliced onions and of course, cashew cheese (which I added approx. 5 min before final cooking time of pizza. My finicky husband even liked it--he said it was just missing the olives!) I've also added it to my spaghetti like Parmesan and to my veggie salads! Be warned--it's like parmesan in texture NOT gooey like mozzarella and the flavor can be adjusted somewhat to taste with your spices and flavorings!
