Martha,

That is great news. I wish you luck. Dedicating your time to this

project can be very therapuetic for you. Cant wait to see what you

come up with. I also have a couple recipes I'd be happy to share

with you when the time comes.

a few renal cookbooks but they tend to be small and don't have much in the

way of vegetarian fare in them so I've been altering my favorite recipes to

make them more renal friendly. I'd be happy to send you some of them if you

would like.

a few renal cookbooks but they tend to be small and don't have much in the

way of vegetarian fare in them so I've been altering my favorite recipes to

All the renal diet cookbook I have a pretty much zero vegetarian content.

That's one reason I don't use them much, since I've never been into fancy

meat dishes. If I could only eat beans, I would be happy. I wish there was a

way of pre-soaking them the way we do for potatoes (takes 50% of the

potassium out). Too much potassium and/or phosphorus is the single biggest

downside, diet-wise, to having kidney failure, as far as I'm concerned.

Other than that, the diet wouldn't be too bad at all.

Instead of pre-soaking beans you can boil them for a few hours and

get pretty much the same thing as pre-soaking the package should have

instrutions for it.

What.... you can do that with potatoes.... and it cuts the

potassium... No way.

Damn why didnt anyone tell me that before the surgery. I just

avoided potatoes and broccoli as a whole. Now they want me to eat

more foods with phosphous and potassium go figure...

Nothing beats a potator buffet. Boil em mash em put em in a stew.

As far as I know, it only works with potatoes. Cutting them in small, thin

pieces and soaking for 3 or 4 hours leaches out half the potassium. So, when

they are cooked and mashed, for example, a person who has to watch potassium

can eat a normal-sized portion. I have no knowledge that this works with any

other types of vegetables. But it's sure helpful to be able to have

potatoes. They could even be fried, if you don't mind eating French fries

without salt on them. To me, fries have always just been an excuse to eat

grease mixed with salt and vinegar :)
