Never made the bread, but love your statement on the bottom :)

Bette Hagman's bread

Has anyone tried doubling the recipe for Bette Hagman's True Yeast Bread? I tried doubling it today and I am not sure if it did not turn out because of doubling it or if I did something else wrong.

The batches I did seperately turned out wonderfully well but the batch I doubled fell and didn't turn out at all. I used all the same ingedients. Should I have beat it longer than the 3 1/2 minutes that it calls for on the single batch or is it just a bad idea to double it?

Here is what I have to do to to all Bette's bread recipes to keep them from falling:

I have to reduce the liquid by 1/4-1/2 C (depending on the air humidity)

I have to reduce the oven temp from 400 degrees down to 350 degrees

I have to place the bread in the "cold" oven to rise, and then at the last 10-15 minutes of the rise I turn the oven on to preheat.

Can I ask why you doubled the batch? I find that even though she says her recipes make two loaves, I have to use the whole batch to get one "normal" sized loaf of bread.

I make her Tapioca and her True Yeast bread.

Did you double the yeast? You don't usually need to double the yeast

when doubling the recipe. The same amount or maybe 1/4 more. It may

have over risen.

The reason I doubled the recipe is if I do two batches I can make 3

loaves of bread. I was trying to get it to go quicker. I am making

several loaves up so that I can freeze it for a trip I am making.

With the holidays I am not wanting to spend a lot of extra time baking

bread. My kids like the True Yeast Bread better and I need enough for

stuffing for 12 people and sandwiches for us for a couple weeks.

Thanks for the advice. Someone suggested not doubling the yeast so

maybe that might have helped.

Which book has the true yeast bread? I have several of her books, but we haven’t

tried this recipe yet.

Which book has the true yeast bread? I have several of her books, but we haven’t

The recipe is in her Revised Gluten Free Gourmet. It is so much better than her Tapioca Bread! I use her Feather Light flour mix substituting Potato Starch for the Corn Starch.

This recipe has become the only one I have made. You can even eat a slice of bread with butter on it with out toasting it. It also makes good sandwiches after several days.

This recipe has become the only one I have made. You can even eat a slice of bread with butter on it with out toasting it. It also makes good sandwiches after several days.

a mixer and letting them rise in the over or somewhere. A bread

machine is convenient, but not a necessity.

Bette Hagman has several books that are definitely worth looking. You

might try your library first. The recipe from this thread is in her

Revised Gluten Free Gourmet book.

I have not ever tried this in a regular mixer but I use my Kitchen Aid (the best investment I made in the whole time my daughter has been diagnosed). I never was able to make bread turn out well before I got my Kitchen Aid.

The recipe is in the Gluten Free Gourmet Revised Cook Book. I would try to e-mail it but we are headed out of town and I am trying to get things packed up.
