I agree there are way too many chemicals in our food, and I'm not too crazy

about genetically-engineered foods either. I wouldn't mind trying the

Essene bread. I love home-made breads of all kinds. At one time, when I was

trying to control my blood pressure via low sodium, I had a recipe for

sodium-free bread, and I made my own for a stretch of a couple of months.

It's quite a bit of work though, although, I suppose a bread machine would

make it much easier. Right now, I just came home from dialysis, and the only

bread I'm really craving is a pizza. And to think I used to easily warf down

a whole medium pizza with extra cheese every Friday night, and I didn't gain

weight either :)

As sort of a minimalist in many ways, I can't disagree with your comment

about living simply.
