I grew up eating the yellow ones--- those are so much sweeter than the more common green/reddish ones and they're not so " stringy. I have found the best way to prepare a mango is: Peel using sharp knife; Using knife tip, determine the position of the pit; Make a single slice along each flat side of the pit; make another slice on the rounded side of the pit and cut slices into bite-sized pieces. It will look like you are wasting a lot still attached to the pit, but really you are not. I love mangoes but they are not always ripe enough.
