Guest guest Posted January 28, 2005 Report Share Posted January 28, 2005 Hi. Here's a technique for cutting and baking winter squash. Usually, I just poke holes in it and microwave. However, the butternut squash my husband bought was so huge I didn't have a microwavable dish big enough to contain it. So, after poking holes in it, I put it in a 13x9 inch pan and baked it at 350 degrees F for about 30 minutes. It was then easy to slice. I cut it in half (the long way), scooped out the seeds, and put both halves face down in the pan. Then, I returned the pan to the oven and baked for an hour more. Then, I turned off the oven and left it inside for another hour or so. The result was very smooth and soft squash -- 6 cups' worth -- enough for 3 pies!
