Guest guest Posted March 2, 2005 Report Share Posted March 2, 2005 Hi , My son is 27 months (PDD-NOS) and has been on the diet for two weeks now. I have been perfecting a chicken nugget recipe and I think I finally have it. I use ground chicken instead of chicken strips. I combine ground chicken, garlic, pepper, salt, pureed veggies and 1/2 cup of pecan flour (son has a sensitivity to almonds). I make meatball like shapes and shake them in nut flour. The mixture is really sticky so the flour sticks nicely. I fry in olive oil for 4 minutes. My son loves them. I add tons of different veggies and somtimes fruit. When it is pureed my son has no idea. I also make nuggets with ground turkey, lamb and beef. I usually use almond flour and coconut and bake in the oven. They turn out pretty well and are never soggy. Because the children like the flavor of the nuggets, I no longer have to coat them with anything. I just bake the marinated chicken and they dovour them. Hope that helps. PS I have put peanut butter in the marinade with a touch of honey and put them on skewers to make a " satay " . I trim the sharp end of the skewer and soak them in water before baking. Kids get a kick out of them, especially if I put something special at the end like hearts or happy face stickers. They put the sticker on their plate showing how many skewers they have eaten and then collect a prize ....Did this in the beginning to get them to eat new things. Hope that helps.
