Guest guest Posted March 3, 2005 Report Share Posted March 3, 2005 Jane, What about one of the non-sweet pancake recipes baked in a muffin top pan? They should come out close to the same size as a hamburger bun. I am afraid that you are not going to find anything to be identical or even very close to a regular or gf hamburger bun. Those contain a ton of starch and are light and fluffy. Items made from nut flour are just not that light and fluffy. The lightest, fluffiest muffins and cake that I know of are the cashew butter muffins and an apple carrot cake that I came up with. I'll post the recipe for the cake separately.
