This recipe is from one of my Weight Watchers cookbooks. Might be good to

serve for Thanksgiving dinner.

PUMPKIN CHEESECAKE..An amazingly rich tasting cheesecake, just right to serve as

the finale to a holiday meal.

Makes 6 servings

9 graham crackers (2 1/2 squares), made into crumbs

1/4 cup part-skim ricotta cheese

1/4 cup egg substitute

1/2 cup sugar (I will cut points by using Splenda)

1 tsp ginger

1 tsp vanilla extract

1/2 tsp cinnamon

1/8 tsp salt

One 15-ounce can pumpkin puree ( How about fresh?)

1. Preheat the oven to 350*, spray a 9 " glass pie plate with nonstick cooking

spray. Sprinkle the graham cracker crumbs over the bottom of the pie plate.

2. In a food processor or blender, combine the cottage cheese and ricotta;

process until smoothe, about 1 minute. Transfer to a large bowl, stir in the

egg substitute, sugar, ginger, vanilla, nutmeg, cinnamon and salt. Rreserve 1/4

cup of the batter. Add the pumpkin to the batter; stir until blended.

Scrape the batter into the pie plate, then drizzle the reserved batter in 3

concentric circles over the pumpkin batter. With a knife, lightly draw a line

through the batter from the center toward the outer edge; about 2 " from that

line, lightly draw the knife through the batter from the outer edge toward the

center. Repeat around the pie, alternating directions, to make a spiderweb.

3. Bake until a knife inserted in the center comes out clean, 45-50 minutes.

Cool completely on rack. Refrigerate, covered, until ready to serve.

Per serving: 218 calories, 4 g Total Fat, 2 g Saturated Fat, 11 g Cholesterol,

344 mg Sodium, 33 g Total Carbohydrate, 1 g Dietary Fiber, 12 g Protein, 138 mg

Calcium. POINTS per serving: 4

Re: on and off topic

I tend to agree with Terri on this one. I also am finding that there

are a lot of really off topic issues being discussed these days. As I

scroll through the list I see that a lot of them could be emailed

between the interested parties privately as well. That way they will

get all the support they need without discussing it with the whole

group.

I tend to reply on list to only on topic issues and if something is

off topic that is of interest, I will email the person privately to

discuss it. The off topic issues tend to take days to get through

them, only to have another one pop up

I find that time is tight these days for me so I scroll through until

I find on topic messages to read and skip the rest.
