I have done this, but I am very concerned about clogging arteries. I am so heart conscious since my husband has to be on a heart healthy diet. I am thinking that this wouldn't be too good for anybody whether they need to be on a heart healthy diet or not. I do not use coconut oil with my husband, but I am concerned that this is just not healthy for my son nor I. What do you think? Any suggestions? Use oil in baking, sunflower or safflower and to saute or fry, olive oil also for some cooking. If you are doing dairy, just drip yogurt from 3.8% milk and use as a spread. I have never used coconut oil, but I do use small amounts of butter. If making a vegetable omelet, I saute the veggies in olive oil and remove to a plate, clean the skillet and do the egg part with 1/2 pat of butter. Carol F. SCD,4yrs.
